Seasonal Dishes

It's time to take advantage of all the fresh spring vegetables, like a real Italian. A staple in central Italy, artichokes are naturally low in fat and calories and a good source of potassium, vitamin C, fiber, and magnesium. Often served in spreads or salads, artichokes are delicious — and healthier — on their own. Drizzled with a garlicky lemon-dill sauce in this Artichokes with Lemon and Dill recipe, fresh artichokes are a great starter or side dish for a springtime meal. A hearty, fresh Spring Vegetable Soup with Pesto is another great way to enjoy all your veggies Italian-style. Just one bowl of this soup, topped with a simple homemade pesto, provides three of the recommended five daily servings of vegetables.
